Just 10 minutes by car from the Mas Saint Antoine lies a little-known culinary gem: Escargot des Restanques in Saint-Remèze, a snail farm established for over 20 years at the foot of the Ardèche hills. After 10 years of welcoming families and groups to southern Ardèche, we’ve noticed this visit appeals as much to curious children as to adults who love short food circuits and local gastronomy. Here’s our complete guide to plan your discovery, with hours, practical tips and ideas for combining with other regional sites.
What is Escargot des Restanques and why is it worth visiting?
Escargot des Restanques is a snail farm located on the dry slopes of Saint-Remèze, 2 km after exiting the village on the D4 road to Bourg-Saint-Andéol. Since June 2025, the operation has been taken over by the Royé Brothers, an organic farm based in Rosières (South Ardèche), with respect for the founders’ know-how. The breeding remains in Saint-Remèze, where Rémy continues the snail farming adventure with the same passion: he’s the one who welcomes you and leads the guided tours.
The species raised here is the Helix aspersa maxima, better known as the gros gris (big grey). Originally from North Africa, introduced to France in the 1970s, it has perfectly acclimatised to our Mediterranean terroirs. Its flesh is reputed to be more tender and generous than that of the famous Burgundy snail, weighing between 20 and 30 grams with a shell of 40-45 mm.
What makes this farm particularly interesting:
- Outdoor breeding in parks sown with clover and fodder radish, where snails feed naturally, supplemented with crushed cereals enriched with calcium for shell formation.
- 100% on-farm processing: snails are harvested, prepared and cooked on site using home recipes (Provençal sauce, court bouillon, spicy sauce, croquilles, spreadable mousse).
- An educational approach: the 1-hour guided tour takes you through the parks, breeding room, hatchery, and processing lab. Perfect with children.
- A genuine continuity of know-how: the takeover by the Royé Brothers (an organic farm committed to short circuits) guarantees the longevity of the operation and product quality.

What to see and do on site?
The farm offers two tour formats, both led by Rémy and the team.
1. The classic guided tour (about 1 hour)
This is the basic formula, ideal for discovering the life of snails and the world of snail farming. You follow Rémy through the different stages: outdoor breeding parks, the reproduction room (explanation of the complete cycle, from mating to egg laying), the hatchery (observation of 3mm spherical eggs and baby snails), shell identification (Burgundy, petit gris, gros gris, Turkish snail, achatines), preparation explanations (fasted and disgorged terms) and a final tasting featuring spreads, garlic butter snails and the signature croquilles.
2. The gourmet tour (by reservation)
The premium version: same tour enriched with a real tasting of several recipes, sometimes accompanied by complementary Ardèche products. For food lovers or those who want to make a light meal of it. Book ahead at 06 88 04 44 59.
3. Products to take home
After the tour, the farm shop is open all year. You can find: snail meat in court bouillon, snails in Provençal sauce (tomato, herbs, garlic), snails in spicy sauce, Rest’apéro (special aperitif recipe), spreadable snail mousse, frozen snails in shells Burgundy-style, and croquilles (cookies filled with snail and snail butter — you eat everything, shell included; the house signature).
🆕 Good to know: since the Royé Brothers’ takeover, you can also find all Escargot des Restanques products at the Les Frères Royé producer shop in Rosières (605 Chemin de Mercoire, 07260 Rosières), equipped with an automatic dispenser accessible 24/7. Handy if you’re in the area on a Sunday or outside farm visit hours.
4. Group visits
Are you staying at Mas Saint Antoine with a group of friends, a family reunion or a seminar? The farm accepts groups by reservation. It’s an original and unifying activity, particularly appreciated during full-property hire stays. (For group arrangements, contact the farm directly at 06 88 04 44 59.)
When to visit? Which season to choose?
Spring (April to June)
This is when snails emerge from hibernation and breeding is in full swing. You’ll see the parks come alive, the first eggs laid, and baby snails appearing in May. In 2026, from 20 May to 30 June, visits take place only on Wednesdays (11am and 3pm) — plan ahead and book.
Summer (July to August)
Main opening period. In July-August 2026: visits on Monday at 3pm, and Tuesday to Friday at 11am and 3pm. Ideal for combining with a day at the river beach. Tip: prefer the 11am visit to enjoy the cool of the morning, especially in July-August when temperatures can rise quickly in Saint-Remèze.
Late season (September to October)
Our favourite period for this visit. Snails are at their adult size, the harvest programme begins, and tourist crowds drop significantly. You benefit from a more intimate visit, more time with Rémy and the team, and the late-season light is splendid for photos. This is also when Mas Saint Antoine opens availability for groups and seminars via private hire (20 to 38 people): a farm visit + tasting is an excellent thread for a gourmet weekend with friends or colleagues. For September-October hours, contact the farm at 06 88 04 44 59.
Winter (November to March)
The snails are hibernating and the farm is closed to visitors. But the farm shop remains open by appointment, and you can also buy products at the Royé Brothers shop in Rosières (accessible all year with 24/7 dispenser).
What budget to plan? 2026 prices
Escargot des Restanques is one of those accessible visits that won’t blow your holiday budget. As a guide (prices to be confirmed at booking on 06 88 04 44 59): adult guided tour around €5, child (6-12) around €4, free up to 5 years old, gourmet tour by reservation (price to confirm), products variable in the on-site shop.
Prices based on publicly available 2025 information. Check current 2026 prices directly with the farm.
What mistakes to avoid?
- Not checking seasonal hours: in May-June 2026, visits ONLY take place on Wednesdays. Arriving another day, you risk finding no one. The phone (06 88 04 44 59) is your best ally.
- Arriving without calling in summer: in July-August, especially for groups, it’s better to confirm 1-2 days ahead.
- Underestimating Rémy’s passion: the announced tour lasts 1 hour, but Rémy loves to share. Plan for 1h15-1h30.
- Not taking products home: it would almost be a shame. The croquilles especially (stuffed cookies) are a signature you won’t find anywhere else.
- Confusing with a restaurant: the farm offers tastings, not full meal service. For a meal around snails, ask Rémy for recommendations.
Where to eat and sleep nearby?
Saint-Remèze is a small village but well located. For restaurants and accommodation, we recommend our Mas clients several confirmed addresses through local guides (Gorges de l’Ardèche – Pont d’Arc Tourist Office). Rather than naming places that might change, we invite you to consult:
- The Gorges de l’Ardèche – Pont d’Arc Tourist Office for current good addresses
- Google Maps with “Restaurants in Saint-Remèze” filter and sort by reviews
- Our Mas clients receive on arrival an up-to-date list of our current favourites for dining and activities
For accommodation, we warmly recommend the Mas Saint Antoine 10 minutes away by car, with its 6 independent cottages and 2-hectare estate. (See dedicated section below.)
